Since I have been staying away from gluten and dairy, it has been hard to find yummy food to eat. Here is a pizza I came up with using gluten-free tortillas and goat and sheep cheeses, which evidently don’t have the lactose that other cheeses do. My kids make these using regular tortillas and cheese. Take the tortilla, spread on olive oil, shake on some garlic powder, onion powder, and oregano. Then put on the cheeses, arugula, and sun-dried tomatoes. Bake it and eat it.

This is a gluten-free tortilla available at Publix.

Spread olive oil on the tortilla.

Sprinkle with Oregano, onion powder, and garlic powder.

Toss on some baby arugula.

And some sun-dried tomatoes

Cover with goat cheese and Manchego (sheep cheese)

Its ready to pop into the oven! Bake at 350 for about 7 to 10 minutes.
